Chicken and Pork on Lemongrass and Sugar Cane Sticks

1.00tspFive-Spice powder

30.00sticksSugar cane , 4 inch canes, or lemongrass skewers
10.00ozChili sauce , red

Preparation

This simple recipe makes a substantial appetizer. The lemongrass and sugar cane skewers not only add a subtle flavor but also create an interesting presentation. Utilizing ground pork scraps and chicken thigh meat is also a great way to keep cost low.

Method:
1. Place the minced meat, crushed garlic, cilantro, sugar and soy sauce in a chilled stainless steel bowl and mix gently until well blended. Season with salt and pepper and five spice powder.

2. Divide mixture into 30 equal portions and mould each portion into a ball. Insert the desired skewer halfway into each ball and gently press meat around firmly.

3. Grill over high heat 3-4 minutes or until meat is thoroughly cooked. Serve 3 per portion drizzles with the chili sauce.
