Originally from southern France, aiolis are tricky to make from scratch. Because they are emulsions, the exact ingredients and blending methods greatly affect the success of the aioli. That’s why, until recently, aiolis were predominantly found in fine-dining establishments where they were made by skilled chefs who had been trained to make them properly. Hellmann’s now makes it possible to have consistent aiolis in all segments.
